Biographical/historical: The Sanitary Commission needed to raise its own funds... One of the most successful fundraising tools was the “Sanitary Fair,” which started in 1863... The giant cheese was made for the Fourth Industrial Fair of the Mechanics’ Institute in San Francisco, which was not an “official” Sanitary Fair, but had significant energy devoted to raising funds for the Sanitary Commission... the great cheese was manufactured by the Steele Brothers dairy. -- https://slicesofbluesky.com/giant-cheese-during-civil-war/, retrieved November 13, 2023
