Bibliographic history: Handwritten caption on verso with erroneous biographical information: Hiram S. Thomas. Originator of Saratoga Chips known as potatoe (sic) chips. He was a famous chef in his time and owner of the famous Rumson Inn of New Jersey.

Hiram S. Thomas served as head waiter at the Grand Union Hotel, and later as the restaurant manager at Moon's Lake House, in Saratoga Springs, New York, during the 1880s to the mid-1890s
